Ingredients
Scale
For the Wraps:
- 4 low-carb wraps
- 3/4 cup shredded lettuce
- 12 bacon strips (cooked until crispy and crumbled)
For the Tomato Marinade:
- 2 tbsp red wine vinegar
- Salt to taste
- 3 large beefsteak tomatoes (thinly sliced)
- 1/4 cup olive oil (Pompeian extra virgin olive oil recommended)
- Black pepper to taste (freshly ground)
For the Secret Sauce:
- 1/4 cup mayonnaise (Hellmann’s mayonnaise preferred)
- 1 tbsp tomato basting mixture (drained from tomato marinade)
Instructions
- Cook the Bacon: In a skillet over medium heat, fry bacon slices until crispy. Remove from skillet and place on a paper towel-lined plate to drain excess grease.
- Prepare the Tomato Marinade: Slice the tomatoes thinly and place them into a large dish. Add olive oil, red wine vinegar, salt, and black pepper. Gently turn the slices to coat them evenly in the mixture.
- Make the Flavored Mayo: In a small dish, combine mayonnaise with 1 tablespoon of the drained tomato basting mixture (olive oil, vinegar, and tomato juices). Stir until well combined to create the secret sauce.
- Assemble the Wrap: Lay a low-carb wrap flat on a plate. Spread 1 tablespoon of the flavored mayo evenly over it. Layer with shredded lettuce, 3 strips of crispy bacon, and 3 slices of marinated tomatoes.
- Roll and Serve: Carefully roll the wrap to enclose all ingredients snugly. Cut in half diagonally if desired. Let rest for 2-3 minutes before serving to allow flavors to meld and prevent ingredient shifting.
Notes
- Cook bacon until fully crispy to avoid soggy wraps and to ensure a firm texture for easy biting.
- Drain tomato slices on paper towels briefly before assembling to reduce excess moisture and keep wraps from getting wet.
- Warm wraps for 10-15 seconds in the microwave before assembling to make them more pliable and easier to roll.
- Avoid overfilling the wraps to prevent them from falling apart.
- Assemble wraps just before eating or keep wet ingredients separate if making ahead to maintain freshness and crispness.
