Ingredients
Scale
For the Tart Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup powdered sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter (cold, cubed)
- 1 large egg yolk
- 2–3 tablespoons ice water
For the Chocolate Filling:
- 8 ounces dark chocolate (70% cocoa, chopped)
- 1/2 cup heavy cream
- 3 large eggs
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- Zest of 1 orange
- Juice of 1 orange
Instructions
- Prepare the Tart Crust: Preheat your oven to 350°F (175°C). In a large bowl, combine the flour, cocoa powder, powdered sugar, and salt. Add the cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs. Stir in the egg yolk and add ice water 1 tablespoon at a time to form a dough, being careful not to overmix. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes. Once chilled, roll out the dough on a lightly floured surface to fit a 9-inch tart pan. Press the dough into the pan, trim excess, and prick the bottom with a fork to prevent bubbling. Bake the crust for 15 minutes, then let it cool slightly.
- Prepare the Chocolate Filling: Melt the chopped dark chocolate and heavy cream together in a heatproof bowl over a double boiler or in the microwave, stirring until smooth. In a separate bowl, whisk the eggs and granulated sugar until light and fluffy. Gradually stir the melted chocolate mixture into the egg mixture. Add vanilla extract, orange zest, and orange juice, mixing until well combined.
- Assemble and Bake: Pour the chocolate filling into the pre-baked tart crust. Bake in the preheated oven for 20-25 minutes, or until the filling is set but still slightly jiggly in the center.
- Cool and Serve: Allow the tart to cool at room temperature, then refrigerate for at least 2 hours before serving. Garnish with orange slices or chocolate shavings if desired. Serve chilled and enjoy this decadent dessert!
Notes
- Use 70% dark chocolate for an intense chocolate flavor balanced by the bright orange zest.
- Chilling the crust ensures a tender, flaky texture and prevents shrinking.
- Do not overbake the tart; the filling should be slightly jiggly to maintain creaminess.
- You can prepare the tart a day ahead for enhanced flavor, keeping it refrigerated.
- For garnish, consider adding candied orange peel or a dusting of powdered sugar.
