Chocolate Coating

  • 1012 ounces white chocolate melting wafers or white candy melts
  • 1 tablespoon coconut oil

  • 1/2 cup chocolate melting wafers or brown candy melts (for drizzle)

Instructions

  1. Prepare Cookie Sheet: Line a 12″x17″ cookie sheet with parchment paper and set aside to prevent sticking.
  2. Mix Cake and Cream Cheese: Unwrap the Zebra snack cakes and place them in the bowl of a stand mixer. Add the cream cheese and beat on medium speed until the mixture becomes smooth and paste-like, ensuring the cake is fully combined.
  3. Portion Cake Mixture: Using a medium cookie scoop, portion the mixture onto the prepared cookie sheet. There is no need to roll each scoop yet; just scoop and place them evenly spaced.
  4. Chill Mixture: Refrigerate the scooped cake mixture for 15 minutes to firm up, making it easier to shape into balls.
  5. Shape Cake Balls: After chilling, take each scoop and gently roll it between your hands to form a smooth ball. Place each formed ball back onto the parchment-lined cookie sheet.
  6. Melt White Chocolate Coating: In a microwave-safe bowl, melt the white chocolate wafers and coconut oil in 30-second intervals, stirring between each until fully melted and smooth.
  7. Dip Cake Balls: Using a fork with the middle prong removed or a truffle dipper, dip each cake ball into the melted white chocolate until fully coated. Place the dipped balls back on the parchment paper to set.
  8. Prepare Chocolate Drizzle: Melt the brown chocolate wafers in a microwave-safe bowl until smooth. Transfer the melted chocolate into a Ziploc bag, snip off a small corner, and drizzle the chocolate over the white coated cake balls in a decorative pattern.
  9. Set Chocolate: Allow the chocolate coating and drizzle to set at room temperature for about 10 minutes until firm.
