Ingredients

Scale

Protein & Vegetables

  • 1 lb lean ground turkey
  • 1 yellow onion, diced
  • 1 large sweet potato, diced small

Seasoning & Oil

  • 1 tablespoon olive oil, divided
  • Salt and black pepper to taste
  • 1 package of low sodium taco seasoning (ensure gluten free if needed)

Dairy & Toppings

  • 1.5 cups shredded cheddar cheese
  • Romaine lettuce, finely chopped
  • Greek yogurt
  • Salsa
  • Guacamole or mashed avocado

Instructions

  1. Heat Oil: Heat half the olive oil in a large skillet over medium heat to prepare for cooking the turkey.
  2. Brown Turkey: Add the ground turkey to the skillet, season with salt and black pepper, and cook until browned and fully cooked. Remove from skillet and set aside.
  3. Sauté Vegetables: In the same skillet, add the remaining olive oil, then sauté the diced onion and sweet potatoes until they are soft and tender.
  4. Combine Meat and Veggies: Return the cooked turkey to the skillet with the softened sweet potatoes and onions, stirring to combine all ingredients evenly.
  5. Add Seasoning: Sprinkle the taco seasoning over the mixture and add a splash of water. Stir and cook for a few minutes until the flavors meld and everything is heated through.
  6. Melt Cheese: Stir in the shredded cheddar cheese until it melts completely, evenly coating the turkey and vegetables.
  7. Serve: Serve the turkey and sweet potato skillet warm. Top with finely chopped romaine lettuce, Greek yogurt, salsa, and guacamole or mashed avocado as desired for added flavor and texture.
