Instructions

  1. Heat Aromatics: In a medium pot, heat the oil over medium heat until shimmering. Add the ginger slices and smashed garlic cloves, cooking them for 2 minutes to release their flavors.
  2. Cook Ground Beef: Add the lean ground beef to the pot and increase heat to medium-high. Cook, stirring occasionally, until the beef is browned and no longer pink, and you hear it sizzling, about 5 minutes.
  3. Add Tomato Paste: Stir in the tomato paste and cook for an additional 2 minutes, allowing it to caramelize slightly and deepen the soup’s flavor.
  4. Simmer Soup: Pour in the low-sodium chicken stock, then add sugar, salt, ground white pepper, white vinegar, enoki mushrooms, and the white parts of the scallions. Bring the soup to a simmer and cook gently for at least 15 minutes, until the enoki mushrooms are soft and have absorbed the soup’s flavors.
  5. Garnish and Serve: Remove the pot from heat and garnish the soup with the thinly sliced green parts of the scallions. Serve hot and enjoy the rich, aromatic soup.
