Teriyaki Sauce

  • 2 teaspoons Minced garlic
  • 1 teaspoon Ground ginger
  • 1 tablespoon Cornstarch
  • 2 tablespoons Warm water

Turkey and Vegetables

  • 1 tablespoon Vegetable oil
  • 1/2 cup Diced onion
  • 2 tablespoons Minced garlic
  • 1 pound Ground Turkey
  • 1 cup Broccoli (finely chopped)
  • 2 Large carrots (peeled and grated)

To Serve

  • 2 Green onions (diced, for garnish)
  • 4 cups Cooked white or brown rice

Instructions

  1. Prepare Teriyaki Sauce: In a small bowl, whisk together the cornstarch and warm water until fully dissolved. Set this slurry aside for thickening the sauce later.
  2. Cook Sauce: In a small saucepan over medium heat, gently whisk together the soy sauce, water, red wine vinegar, brown sugar, granulated sugar, minced garlic, and ground ginger until the sugars have completely dissolved.
  3. Thicken Sauce: Slowly whisk in the cornstarch mixture to the saucepan. Allow the sauce to simmer, stirring frequently, until it thickens. Remove from heat and set aside.
  4. Cook Aromatics: Heat vegetable oil in a large skillet over medium-high heat. Add diced onions and cook, stirring frequently, until the onions soften but do not burn. Reduce heat immediately if onions begin to scorch.
  5. Add Garlic and Turkey: Stir in minced garlic. Add ground turkey, breaking it apart with a spatula. Cook, stirring occasionally, until turkey is halfway cooked through, about 4-5 minutes.
  6. Add Vegetables: Mix in grated carrots and finely chopped broccoli. Continue cooking for 5-6 minutes or until the turkey is no longer pink and the vegetables are tender.
  7. Combine with Sauce: Pour the prepared teriyaki sauce over the turkey and vegetables. Stir well to coat evenly. Simmer the mixture for about 5 minutes to meld the flavors.
  8. Assemble Bowls: Divide cooked white or brown rice among four bowls. Top each bowl with the teriyaki turkey and vegetable mixture.
  9. Garnish and Serve: Sprinkle diced green onions on top of each bowl and serve immediately for best flavor and texture.
