Ingredients
Scale
Summer Berry Refresher Base
- 1 ½ cups water
- 1 cup white grape juice
- ½ cup granulated sugar
- 1 ½ tsp citric acid
- 1 tsp raspberry extract
- 1 tsp blackberry extract
- ¼ tsp blueberry extract
- ¼ tsp blue spirulina powder
Assembly
- ½ cup Summer Berry Refresher Base
- ½ cup sweetened coconut milk
- ¼ cup raspberry popping boba
- Ice, as needed
Instructions
- Make the Summer Berry Refresher Base: In a medium saucepan, combine water, white grape juice, granulated sugar, citric acid, raspberry extract, blackberry extract, blueberry extract, and blue spirulina powder. Whisk over low heat until all ingredients are dissolved and mixed thoroughly. Remove from heat, transfer the base to a large jar, and let it cool completely before use.
- Mix the drink: Pour ½ cup of the cooled refresher base and ½ cup of sweetened coconut milk into a cocktail shaker or large jar with a lid. Add a handful of ice, then shake vigorously until well combined and chilled. Set aside.
- Prepare to serve: Add ¼ cup of raspberry popping boba to a tall glass, followed by a handful of ice. Strain the shaken summer skies drink mixture over the boba and ice in the glass. Insert a boba straw and enjoy immediately.
Notes
- The blue spirulina powder not only adds color but also provides antioxidants.
- Adjust the sugar quantity if you prefer a less sweet drink.
- Make sure the refresher base is completely cooled before mixing with coconut milk to avoid curdling.
- Raspberry popping boba adds a fun texture and burst of flavor—optional but recommended.
- Use sweetened coconut milk to enhance the creaminess and sweetness of the drink.
