  • Author: Julian
  • Total Time: Overnight freezing plus 20-25 minutes active time
  • Yield: 8 popsicles 1x
  • Diet: Vegan

Description

A refreshing and colorful treat, these Strawberry Mango Popsicles combine the sweetness of ripe strawberries and mangoes with a hint of citrus. With simple ingredients and an easy no-cook preparation method (except for optional strawberry softening), these popsicles are perfect for hot days and a healthy dessert option for the whole family.

Ingredients

Scale

Strawberry Mixture

  • 3 cups strawberries
  • 1 tbsp lime juice
  • 1 tbsp maple syrup

Mango Mixture

  • 3 cups cubed mango
  • 1/3 cup orange juice

Instructions

  1. Prepare the strawberries: Add the strawberries, maple syrup, and lime juice to a small pot over medium heat. Cook for 5-10 minutes until the strawberries soften slightly. This step is optional but helps intensify the flavor of the strawberries.
  2. Blend strawberry mixture: Transfer the cooked strawberry mixture to a blender and blend until smooth.
  3. Fill popsicle molds with strawberry mixture: Pour the blended strawberry mixture evenly into the popsicle molds.
  4. Blend mango mixture: Rinse the blender, then add the cubed mango and orange juice. Blend until smooth.
  5. Add mango mixture to molds: Evenly divide the mango mixture on top of the strawberry mixture in the popsicle molds.
  6. Create marble effect (optional): Use a knife or chopstick to gently swirl the two mixtures in each mold to create a marbled pattern.
  7. Freeze: Place the covers with popsicle sticks on the molds and freeze overnight until solid.
  8. Remove and serve: To remove, run the popsicle molds under warm water for about 30 seconds, then gently pull on the sticks to release the popsicles.

Notes

  • The strawberry softening step is optional but enhances flavor.
  • For a vegan version, ensure the maple syrup is pure and not processed with animal products.
  • You can adjust the sweetness by adding more or less maple syrup based on preference.
  • Use fresh ripe fruit for the best flavor and texture.
  • Frozen fruit can be used but may require additional blending time.
