Ingredients

Scale

Eggs and Filling

  • 6 large Eggs (Fresh eggs provide the best texture and flavor.)
  • 1/2 cup Mayonnaise (Greek yogurt can be a lighter substitute.)
  • 1 tablespoon Dijon Mustard (Yellow mustard works as a quick alternative.)
  • 1 tablespoon Hot Sauce (Adjust based on your spice tolerance; Louisiana-style is recommended.)
  • 1 teaspoon Smoked Paprika (Cayenne can substitute for heat.)
  • 1/4 teaspoon Cayenne Pepper (Omit for a milder taste.)
  • 1 teaspoon Dried Oregano (Italian seasoning can work as a substitute if needed.)
  • 1/2 teaspoon Garlic Powder (Fresh garlic can be used for a sharper flavor.)
  • 1/2 teaspoon Onion Powder (Omit if desired for a simpler taste.)
  • 1 teaspoon Granulated Sugar (Optional based on your palate.)

Shrimp and Garnish

  • 1 pound Medium Shrimp (Peeled and deveined.)
  • 1 tablespoon Olive Oil (Essential for searing shrimp.)
  • 1 medium Jalapeño (Thinly sliced; swap with another pepper if preferred.)
  • 2 tablespoons Fresh Chives (Chopped green onions can serve as an alternative.)
  • 2 pieces Lemon Wedges (Fresh lime is a suitable substitute.)

Instructions

  1. Prepare the Eggs: Start by hard boiling the eggs for about 10-12 minutes to achieve firm yolks. Once cooked, immediately place them in cold water to cool, which helps make peeling easier. After cooling, peel the eggs carefully and cut them in half lengthwise. Gently remove the yolks and set aside.
  2. Make Filling: In a mixing bowl, mash the reserved yolks until smooth. Combine them with mayonnaise, Dijon mustard, hot sauce, smoked paprika, cayenne pepper, dried oregano, garlic powder, onion powder, and granulated sugar. Mix until creamy and well incorporated. Place the yolk mixture into the refrigerator to chill while you prepare the shrimp.
  3. Season Shrimp: Take the peeled and deveined shrimp and toss them thoroughly in the remaining spice mixture to ensure even coating. Pat the shrimp dry with paper towels to remove excess moisture, which is crucial for achieving a good sear.
  4. Sear Shrimp: Heat olive oil in a skillet over medium-high heat. Once hot, add the shrimp and sear each side for about 2 minutes until the shrimp develop a slight blackened crust and are fully cooked. Remove the shrimp and let them cool completely to avoid toughening the filling.
  5. Assemble: Spoon or pipe the creamy yolk mixture back into the egg white halves evenly. Place one seared shrimp on top of each filled egg. Garnish each with a thin slice of jalapeño and a sprinkle of chopped fresh chives for color and added flavor. Serve immediately or refrigerate until ready to serve.
  6. Optional Garnish: For an extra spicy kick, add additional jalapeño slices on top of the deviled eggs before serving. Accompany with fresh lemon wedges for squeezing over the shrimp.

Notes

  • Use fresh eggs for best texture and ease of peeling.
  • Adjust the amount of hot sauce and cayenne pepper based on your spice preference.
  • To keep the filling lighter, substitute mayonnaise with Greek yogurt.
  • Ensure shrimp are patted completely dry before searing to get a perfect blackened crust.
  • These deviled eggs can be made a few hours ahead; assemble just before serving to keep shrimp fresh and crispy.
