- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary

Instructions
- Season the Roast: Pat the beef chuck roast dry with paper towels and season generously with salt and pepper on all sides to enhance flavor.
- Sear the Meat: Heat olive oil in a large skillet over medium-high heat. Once hot, add the roast and sear for 3-4 minutes on each side until browned, locking in juices and adding depth to the flavor.
- Transfer to Slow Cooker: Remove the seared roast from the skillet and place it in the slow cooker.
- Sauté Aromatics: In the same skillet, add the chopped onion and sauté for 2-3 minutes until softened. Add minced garlic and sauté for an additional minute until fragrant.
- Add Aromatics to Slow Cooker: Transfer the sautéed onion and garlic mixture over the roast in the slow cooker, spreading evenly.
- Add Vegetables: Arrange carrots and potatoes around the roast in the slow cooker. Add mushrooms if using.
- Prepare Liquid Mixture: In a bowl, combine beef broth, Worcestershire sauce, dried thyme, dried rosemary, and bay leaves. Pour this mixture over the roast and vegetables.
- Cook Low and Slow: Cover the slow cooker and cook on low for 8-10 hours or high for 4-5 hours, until the beef is fork-tender and vegetables are tender.
- Rest and Serve: Remove the roast and vegetables, let the meat rest for at least 10 minutes before slicing. Serve with vegetables and some cooking liquid spooned over the top for extra flavor.
