Instructions

  1. Season the shrimp: In a medium bowl, combine the peeled and deveined shrimp with kosher salt and ground white pepper. Toss well to evenly coat, then set aside to marinate briefly.
  2. Sear the shrimp: Heat 2 tablespoons of avocado oil in a wok or large skillet over medium-high heat. Add the shrimp and cook for about 1-2 minutes per side until they turn opaque and slightly golden. Remove the shrimp from the pan and set aside.
  3. Sauté aromatics: Using the same pan, add the diced onion, the white parts of the scallions, minced garlic, and ginger. Stir-fry for about one minute until fragrant and the onions start to soften.
