Ingredients
Scale
For the Chicken Cobbler:
- 1/2 cup unsalted butter, melted
- 3 1/2 to 4 cups shredded rotisserie chicken
- 20 ounces frozen mixed vegetables (corn, peas, and carrots)
- 11.36 ounces Red Lobster Cheddar Bay Biscuit mix, including enclosed seasoning packet
- 2 cups whole milk
- 2 cups chicken stock
- 10.5 ounces cream of chicken soup
- 1/2 teaspoon seasoned salt (Lowry’s brand)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
Instructions
- Preheat and prepare the dish: Preheat your oven to 350°F. Pour the melted butter into a 9×13-inch baking dish and swirl it around so that the entire bottom is coated with butter.
- Layer the chicken: Evenly spread the shredded rotisserie chicken over the buttered bottom of the baking dish.
- Add the vegetables: Top the chicken layer with the frozen mixed vegetables, spreading them evenly.
- Mix biscuit batter: In a large mixing bowl, whisk together the Red Lobster Cheddar Bay Biscuit mix, including the enclosed seasoning packet, with the whole milk until just combined. Avoid overmixing.
- Pour biscuit layer: Carefully pour the biscuit mixture over the frozen vegetables layer, making sure not to disturb the layers beneath.
- Prepare soup mixture: In the same bowl used for the biscuit batter, add chicken stock, cream of chicken soup, seasoned salt, garlic powder, and black pepper. Whisk until fully combined and smooth with no lumps.
- Add soup mixture: Gently pour the soup mixture over the biscuit batter in the baking dish. Be careful not to stir or mix layers.
- Bake: Place the baking dish in the oven and bake for 55 to 60 minutes, or until the biscuit crust has risen around the edges, is lightly golden brown, and the liquids are bubbling.
- Rest and serve: Remove the cobbler from the oven and let it rest at room temperature for 10-15 minutes to allow the sauce to thicken slightly before serving.
Notes
- To prevent the biscuit layer from becoming tough or dry, do not overmix the biscuit batter.
- Using rotisserie chicken makes this dish quick and flavorful, but fresh cooked chicken can be used as well.
- Allowing the cobbler to rest after baking improves texture by thickening the sauce.
