Ingredients
Scale
Vegetables
- 1 ½ pounds Brussels sprouts, trimmed and quartered
- 3 large carrots, peeled and sliced into ½ inch pieces
Seasonings and Sauces
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoons honey
Instructions
- Preheat the oven: Set your oven to 450°F (232°C) and allow it to fully preheat to ensure the vegetables roast evenly.
- Prepare the baking sheet: Spray a large baking sheet with nonstick spray or line it with aluminum foil and then spray to prevent sticking.
- Prepare the Brussels sprouts: Wash, trim off the ends and any yellow leaves, then quarter the Brussels sprouts and place them in a large mixing bowl.
- Prepare the carrots: Peel the carrots and slice them into ½ inch pieces, making sure they are roughly the same size as the Brussels sprouts for even cooking.
- Combine vegetables: Add the sliced carrots to the bowl with the Brussels sprouts, ensuring they are well mixed.
- Add seasonings: Drizzle the olive oil, balsamic vinegar, minced garlic, salt, and black pepper over the vegetables. Toss thoroughly to coat all pieces evenly.
- Arrange on baking sheet: Spread the coated Brussels sprouts and carrots in a single layer on the prepared baking sheet.
- Roast the vegetables: Place the baking sheet in the oven and roast for 18-20 minutes, or until the vegetables are fork tender and starting to caramelize.
- Add honey: Remove the baking sheet from the oven and drizzle the honey over the roasted vegetables. Toss gently to coat them evenly with the honey.
- Finish roasting: Return the pan to the oven and roast for an additional 3-5 minutes to let the honey caramelize slightly.
- Garnish and serve: Remove from the oven, garnish with freshly chopped parsley if desired, and serve warm to enjoy the flavors at their best.
Notes
- For extra crispiness, spread the vegetables out so they are not crowded on the baking sheet.
- Feel free to substitute honey with maple syrup for a vegan twist.
- Use fresh parsley as a garnish to add color and freshness to the dish.
- This dish pairs well with roasted meats or as part of a vegetarian meal.
- Make sure to toss the vegetables halfway through roasting if you want more even browning.
