Description

Deliciously caramelized roasted Brussels sprouts and carrots tossed in a savory blend of olive oil, balsamic vinegar, garlic, and honey. This easy and healthy side dish offers a perfect balance of sweetness and tang, making it an ideal addition to any meal.

Ingredients

Scale

Vegetables

  • 1 ½ pounds Brussels sprouts, trimmed and quartered
  • 3 large carrots, peeled and sliced into ½ inch pieces

Seasonings and Sauces

  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons honey

Instructions

  1. Preheat the oven: Set your oven to 450°F (232°C) and allow it to fully preheat to ensure the vegetables roast evenly.
  2. Prepare the baking sheet: Spray a large baking sheet with nonstick spray or line it with aluminum foil and then spray to prevent sticking.
  3. Prepare the Brussels sprouts: Wash, trim off the ends and any yellow leaves, then quarter the Brussels sprouts and place them in a large mixing bowl.
  4. Prepare the carrots: Peel the carrots and slice them into ½ inch pieces, making sure they are roughly the same size as the Brussels sprouts for even cooking.
  5. Combine vegetables: Add the sliced carrots to the bowl with the Brussels sprouts, ensuring they are well mixed.
  6. Add seasonings: Drizzle the olive oil, balsamic vinegar, minced garlic, salt, and black pepper over the vegetables. Toss thoroughly to coat all pieces evenly.
  7. Arrange on baking sheet: Spread the coated Brussels sprouts and carrots in a single layer on the prepared baking sheet.
  8. Roast the vegetables: Place the baking sheet in the oven and roast for 18-20 minutes, or until the vegetables are fork tender and starting to caramelize.
  9. Add honey: Remove the baking sheet from the oven and drizzle the honey over the roasted vegetables. Toss gently to coat them evenly with the honey.
  10. Finish roasting: Return the pan to the oven and roast for an additional 3-5 minutes to let the honey caramelize slightly.
  11. Garnish and serve: Remove from the oven, garnish with freshly chopped parsley if desired, and serve warm to enjoy the flavors at their best.

Notes

  • For extra crispiness, spread the vegetables out so they are not crowded on the baking sheet.
  • Feel free to substitute honey with maple syrup for a vegan twist.
  • Use fresh parsley as a garnish to add color and freshness to the dish.
  • This dish pairs well with roasted meats or as part of a vegetarian meal.
  • Make sure to toss the vegetables halfway through roasting if you want more even browning.
