  • Author: Julian
  • Total Time: 50 minutes
  • Yield: 16 bars 1x

Description

Delightfully sweet and tangy Raspberry Crumble Bars featuring a buttery oat crust and topping, layered with a luscious raspberry filling. Perfect as a snack, dessert, or treat with tea or coffee.

Ingredients

Scale

For the Crust and Topping:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar (packed)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold and cubed)

For the Raspberry Filling:

  • 2 cups fresh or frozen raspberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper to prevent sticking.
  2. Make Crumble Mixture: In a large mixing bowl, combine flour, rolled oats, brown sugar, baking powder, and salt. Add cold, cubed butter and use a pastry cutter or your fingers to mix until the mixture resembles coarse crumbs.
  3. Reserve Topping Crumble: Set aside about 1 cup of the crumble mixture to use later as the topping for the bars.
  4. Prepare Raspberry Filling: In a medium bowl, gently toss raspberries with granulated sugar, cornstarch, lemon juice, and vanilla extract until well combined. This mixture will form the juicy filling.
  5. Form Crust Layer: Press the remaining crumble mixture firmly into the bottom of the prepared baking pan to create an even, compact crust layer.
  6. Add Raspberry Filling: Spoon the prepared raspberry mixture evenly over the crust layer, spreading carefully to cover the surface.
  7. Top with Crumble: Sprinkle the reserved crumble mixture evenly over the raspberry filling to form a crunchy topping layer.
  8. Bake Bars: Bake in the preheated oven for 30 to 35 minutes, or until the top turns golden brown and the raspberry filling is bubbling.
  9. Cool Bars: Allow the bars to cool in the pan for about 10 minutes, then transfer them to a wire rack to cool completely for clean slicing.
  10. Slice and Serve: Once cooled, slice into squares or bars. Serve warm or at room temperature and enjoy!

Notes

  • Use fresh or frozen raspberries; if using frozen, do not thaw before mixing to avoid excess liquid.
  • For easier cutting, chill the bars briefly after cooling completely.
  • Store leftover bars in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • You can substitute butter with a dairy-free alternative for a lactose-free version.
  • Adding a pinch of cinnamon to the crumble mix can enhance flavor if desired.
