  • Author: Julian
  • Total Time: 30 minutes
  • Yield: 12 servings 1x

Description

Delight in these Peanut Butter Cup Stuffed Brookies, a luscious hybrid of brownies and cookies filled with creamy Reese’s Peanut Butter Cups. Perfectly baked to achieve firm edges and soft centers, these brookies offer a decadent treat for any occasion.

Ingredients

Scale

Brownie Mix

  • 1 (10 oz) bag brownie mix (plus required oil and egg as per package instructions)

Cookie Dough

  • 1 (16 oz) package refrigerated cookie dough

Filling

  • 12 Reese’s Peanut Butter Cups

Optional

  • Vanilla ice cream for serving

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat your oven to 350°F (175°C) and grease a 12-cup muffin tin to prevent sticking.
  2. Prepare Brownie Mix: Follow the instructions on the brownie mix package, combining the mix with oil and egg as directed. Set aside the prepared batter.
  3. Shape Cookie Dough: Divide the refrigerated cookie dough into 12 equal balls. Lightly flatten each ball and place one in each muffin cup.
  4. Add Peanut Butter Cups: Place one Reese’s Peanut Butter Cup upside down on top of each cookie dough ball in the muffin tin.
  5. Pour Brownie Batter: Carefully pour the prepared brownie batter over each cookie dough ball and peanut butter cup, filling about 90% of each muffin cup.
  6. Bake: Bake the brookies in the preheated oven for 18-20 minutes, or until the edges are set and firm but the centers remain slightly soft for a fudgy texture.
  7. Cool and Serve: Let the brookies cool in the muffin tin for about 5 minutes before carefully removing them. Serve warm, optionally with a scoop of vanilla ice cream for an extra indulgent treat.

Notes

  • Ensure not to overfill the muffin cups to prevent batter overflow during baking.
  • Use a toothpick to check doneness; it should come out with a few moist crumbs but not wet batter.
  • Allow brookies to cool slightly to help them set and make removal from the tin easier.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • For a nuttier flavor, consider substituting regular peanut butter cups with dark chocolate or miniature peanut butter cups.
