Main Ingredients
- 1 tablespoon olive oil
- 1 pound chicken breast (cut into 1-inch bite-size pieces)
- 4 cups broccoli florets (275 grams)
- 2 cups julienned red bell peppers (220 grams)
- 2 cups julienned carrots (185 grams)
- 3/4 cup peanut sauce
- Salt and pepper, to taste
For Serving
- Rice, cauliflower rice, quinoa, or noodles (optional)
For Toppings (Optional)
- Cilantro
- Peanuts
- Sesame seeds
- Lime juice
Instructions
- Prepare the peanut sauce: Make the peanut sauce according to your preferred recipe or use store-bought, adjust the seasoning to your taste, and set it aside for later use.
- Cook the chicken: Heat olive oil in a large skillet over medium-low to medium heat until hot. Add the bite-sized chicken pieces, season with salt and pepper, and sauté for 5-7 minutes, stirring occasionally, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.
- Sauté the vegetables: In the same skillet with the leftover chicken juices, add the broccoli florets and carrots along with salt and pepper. Cook for 2-3 minutes, stirring occasionally to soften slightly. Next, add the julienned red bell peppers and continue sautéing for another 5-7 minutes until vegetables are tender but still crisp. Lower the heat to low.
- Combine and warm: Return the cooked chicken and any accumulated juices back to the skillet with the vegetables. Pour in the peanut sauce and stir everything together to coat evenly. Let it warm through on low heat for about 1 minute.
- Serve: Serve the peanut butter chicken hot, topped with your choice of cilantro, peanuts, sesame seeds, and a squeeze of lime juice if desired. Enjoy it over your preferred side such as rice, cauliflower rice, quinoa, or noodles.
