Ingredients
- 1 1/2 cups freshly brewed coffee
- 1 cup canned coconut milk
- 4 teaspoons 100% cacao powder
- 1/2 teaspoon vanilla powder (ground vanilla beans)
Instructions
- Warm the coconut milk: Heat the canned coconut milk over medium-high heat on the stovetop until it is hot but not boiling, which should take about 4-5 minutes. Stir occasionally to avoid scorching.
- Combine ingredients in blender: Add the hot coconut milk, freshly brewed coffee, cacao powder, and vanilla powder into a high-powered blender such as a NutriBullet.
- Blend the mixture: Blend all ingredients together for about 15 seconds until smooth, creamy, and well combined.
- Serve and enjoy: Pour the mocha latte into cups and enjoy immediately as a nourishing, paleo-friendly morning drink.
Notes
- For a sweeter version suitable for Paleo (but not Whole30), add 1-2 tablespoons of pure maple syrup before blending.
- Use 100% cacao powder without any added sugar or sweeteners to stay compliant with Whole30 guidelines.
- Vanilla powder can be substituted with a small amount of pure vanilla extract if unavailable.
- This recipe serves 2 and can easily be scaled up or down.
