Description
Oreo Strawberry Ice Cream Bars are no-bake, creamy frozen treats featuring a crunchy Golden Oreo crust and a light strawberry ice cream filling made with whipped cream and sweetened condensed milk. Fresh strawberries add bright flavor and texture, making these bars a perfect refreshing dessert for summer that can be prepared ahead and sliced as needed.
Ingredients
Scale
Crust
- 36 Golden Oreo Cookies, divided
- 6 tablespoons Butter, melted
Filling
- 2 cups Heavy Cream
- 1/2 cup Sweetened Condensed Milk
- 1 ½ cups Strawberries, divided, chopped
Instructions
- Prepare the crust. Line a 9×9 square pan with parchment paper and set aside. Use a food processor to finely crush 24 of the Golden Oreos until they form a fine crumb.
- Mix crust ingredients. In a mixing bowl, combine the crushed Oreos with the melted butter, mixing until evenly incorporated.
- Form the crust. Press the cookie and butter mixture firmly and evenly into the bottom of the prepared pan to create the crust layer. Place the pan in the freezer while preparing the filling.
- Whip cream. In a large mixing bowl, use an electric mixer to whip the heavy cream until stiff peaks form, ensuring the cream is cold for best results.
- Add condensed milk. Fold the sweetened condensed milk gently into the whipped cream until fully combined and smooth.
- Fold in strawberries. Stir in 1 cup of the chopped strawberries carefully to keep pieces distinct and prevent bleeding.
- Assemble bars. Spread the strawberry cream mixture evenly over the chilled Oreo crust.
- Add topping. Coarsely crush the remaining 12 Oreos and sprinkle them over the top of the ice cream layer for texture.
- Freeze bars. Freeze the assembled bars for at least 8 hours or overnight until completely firm.
- Serve. Before serving, top the bars with the remaining ½ cup chopped strawberries. Lift the bars out of the pan using the parchment paper and slice into 8 even portions.
Notes
- Use cold heavy cream so it whips to stiff peaks quickly and holds its structure well.
- Fold strawberries in last to keep the fruit pieces intact and avoid excess moisture bleeding into the filling.
- Freeze bars fully before slicing to achieve clean edges and even portions.
- Store leftover bars in an airtight container in the freezer for up to 2 weeks.
- Let bars sit at room temperature a few minutes before slicing for easier cuts.
