Ingredients
Scale
Crust
- 20 regular Oreo cookies
- 1/2 cup unsalted butter, melted
Mint Cheesecake Filling
- 24 oz cream cheese, softened
- 1 cup granulated sugar
- 1/4 cup sour cream
- 2 large eggs, room temperature
- 1 1/2 teaspoon mint extract
- 3–4 drops green gel food coloring
Whipped Cream Topping
- 2/3 cup heavy cream, cold
- 3 tablespoons powdered sugar
- Fresh mint leaves, for garnish
- Chocolate shavings, for garnish
Instructions
- Preheat Oven: Preheat your oven to 325°F (163°C) to prepare for baking the crust and filling.
- Prepare Pan: Line an 8×8 or 9×9 inch baking pan with parchment paper, leaving an overhang on two sides to easily lift out the cheesecake bars once cooled.
- Make Oreo Crust: Place the Oreo cookies into a food processor and blend until fine crumbs form. Transfer the crumbs to a bowl and stir in the melted butter until evenly combined.
- Press the Crust: Press the Oreo mixture firmly and evenly into the bottom of the prepared pan. Bake the crust for 10 minutes to set.
- Mix Cream Cheese: In a large bowl, beat the softened cream cheese with a hand or stand mixer until fluffy, about 1 minute. Gradually add granulated sugar and continue mixing on low to medium-high speed until the mixture becomes light and fluffy.
- Add Sour Cream and Eggs: Incorporate the sour cream into the cream cheese mixture. Then, add eggs one at a time, mixing well after each until fully blended. Be sure to scrape down the sides and bottom of the bowl for even mixing.
- Add Mint Flavoring and Color: Stir in the mint extract and 3-4 drops of green gel food coloring, mixing just until combined to maintain a vibrant mint color.
- Bake Filling: Pour the cheesecake batter over the baked crust and spread evenly. Bake in the preheated oven for 40-45 minutes, until the center is slightly jiggly but the edges are puffed and set.
- Cool and Chill: Remove the cheesecake bars from the oven and place on a wire rack to cool to room temperature. Then cover and refrigerate overnight to fully set and enhance flavors.
- Prepare Whipped Cream: Before serving, in a chilled medium bowl, beat the cold heavy cream and powdered sugar together until stiff peaks form, creating a sweet, fluffy topping.
- Serve: Use the parchment paper to lift the cheesecake from the pan. Cut into bars, top each with whipped cream, fresh mint leaves, and chocolate shavings. Serve immediately and enjoy.
Notes
- For best results, use room temperature eggs and softened cream cheese to ensure a smooth cheesecake texture.
- The mint extract can be adjusted to taste depending on how strong you want the mint flavor.
- If you prefer a more natural green color, you can use spinach powder or natural food coloring alternatives.
- The cheesecake bars should be chilled overnight for the best texture and flavor development.
- You can substitute the Oreo crust with gluten-free Oreo cookies if you need a gluten-free dessert.
- Make sure to not overbake the cheesecake; the slight jiggle in the center indicates perfect doneness for creamy consistency.
