Strawberry Cheesecake Bites:

  • 1 teaspoon clear vanilla extract
  • 1 (13.25 ounces) box strawberry cake mix
  • 12 ounces almond bark or pink melting wafers

Instructions

  1. Prepare Cream Cheese Mixture: In a large mixing bowl, use an electric hand mixer or stand mixer fitted with the paddle attachment to beat the softened cream cheese until smooth. Add the fine sea salt and clear vanilla extract and mix until fully combined.
  2. Add Cake Mix: Stir in the dry strawberry cake mix and continue beating until the mixture becomes thick and smooth. Initially, the mixture will be crumbly but will come together into a dense dough-like consistency.
  3. Chill Mixture: Cover the bowl with plastic wrap and chill the mixture in the refrigerator for at least 2 hours, preferably overnight, to firm up for easier handling.
  4. Prepare Baking Sheet: Line a baking sheet with parchment paper and set aside to place the coated bites once formed.
  5. Melt Coating: Melt the almond bark or pink melting wafers in 30-second intervals, stirring thoroughly between each interval until smooth. Alternatively, melt using a double boiler for best results.
  6. Form and Coat Bites: Using a 1-tablespoon cookie scoop, scoop out the chilled cream cheese mixture and shape into balls. Using a toothpick or fork, dip each ball into the melted chocolate coating, tapping off excess chocolate, then gently place it on the prepared parchment paper.
  7. Add Decorations: While the coating is still tacky, sprinkle with Valentine’s Day festive sprinkles if desired. Repeat for remaining bites.
  8. Set Coating: Allow the coated bites to set at room temperature or speed up setting by chilling for 10-15 minutes in the refrigerator. Optionally, drizzle melted white chocolate over the set bites for an elegant finish.

Notes

  • This recipe works with both 13.25-ounce and 15.25-ounce boxes of cake mix, using the same proportions of other ingredients.
  • To heat treat cake mix for safety, preheat oven to 350°F (175°C), spread cake mix on a baking sheet, and bake for 5-10 minutes reaching an internal temperature of 160°F, then cool completely before use.
  • Microwaving cake mix to heat treat is not recommended as it may alter texture and flavor, but can be done at 50% power for 30 seconds intervals with stirring, cooling completely afterward.
