- 60g vegan / dairy-free cream cheese

Instructions
- Prepare the tray: Line a baking tray with greaseproof paper and set it aside. This will hold the truffles as you prepare and freeze them.
- Crush the cookies: Place the vanilla Oreos into a food processor or blender and pulse until they are finely crumbed. Alternatively, crush them manually using a rolling pin inside a sealed bag until crumb-like.
- Mix truffle base: Transfer the cookie crumbs to a large mixing bowl and add the dairy-free cream cheese. Stir thoroughly until the mixture is sticky and easily forms into balls.
- Shape the truffles: With clean hands, roll the mixture into small balls weighing about 25 grams each. Then shape each ball into a triangular form to resemble Christmas trees and place them on the lined tray.
- Decorate with almonds: Starting from the base of each truffle, press flaked almonds into the truffle surface, layering them upwards with gradually smaller pieces towards the top to mimic tree branches. Tilt the truffles downward slightly to enhance the tree shape.
- Freeze to set: Place the tray in the freezer for approximately 25 minutes to firm up the truffles, ensuring they hold their shape during chocolate coating.
- Melt the chocolate: About 5 minutes before the truffles come out, melt the white dairy-free chocolate using a bain-marie setup over boiling water, or microwave at 20-second intervals, stirring between. Add a drop of green food gel to color the chocolate.
- Coat truffles in chocolate: Remove truffles from the freezer and hold each on a fork. Spoon the green melted chocolate over each truffle, tapping off excess back into the bowl to ensure a smooth coating.
- Freeze again: Return the coated truffles to the lined tray and place them in the freezer for 5–10 minutes to set the chocolate firmly and quickly.
- Decorate with sprinkles: Use extra green chocolate as ‘glue’ to add vegan festive sprinkles and chocolate stars to the truffles.
- Serve and enjoy: Once decorated, the Christmas tree truffles are ready to serve immediately or can be refrigerated until needed.
- Make chocolate stars: Melt some more white dairy-free chocolate and transfer into a piping bag with a small tip cut off. On a lined tray, pipe small star shapes and freeze until firm.
- Add finishing touches to stars: Dust the frozen chocolate stars with edible gold glitter for a festive sparkle.
- Attach stars to truffles: Using a bit of melted chocolate as glue, carefully affix a chocolate star to the top point of each truffle tree.
