Kielbasa Bites

  • 2 rings (13.9 ounces each) Kielbasa

Mustard Sauce

  • ¼ cup (62 g) coarse ground Dijon mustard

  • 1 teaspoon Worcestershire sauce

Dipping Sauce

  • 2 tablespoons mayonnaise

Instructions

  1. Slice the kielbasa: Place each kielbasa ring between two chopsticks or skewers to prevent slicing all the way through. Using a sharp knife, make ¼-inch slices downward motion, stopping at the chopsticks, creating hasselback-style cuts without cutting through.
  2. Cut into bite-sized pieces: After slicing the kielbasa, cut crosswise into roughly 1-inch pieces, each containing about 3 rings per bite. You should get approximately 20 bites per kielbasa ring, about 40 bites total. Place the bites into a large bowl or onto a baking sheet.
  3. Prepare mustard sauce: In a small bowl, combine the Dijon mustard, apple cider vinegar, light brown sugar, and Worcestershire sauce. Mix well until combined.
  4. Divide the mustard sauce: Split the mustard sauce evenly into two bowls.
  5. Make dipping sauce: To one bowl of mustard mixture, add the mayonnaise and stir until smooth. Cover and refrigerate this creamy sauce to serve as a dip later.
  6. Coat kielbasa bites: Pour or brush about half of the remaining plain mustard sauce over the kielbasa bites, making sure to get the sauce into the cut sections of each piece. Reserve the rest of this sauce for after cooking.
  7. Arrange for air frying: Place the kielbasa bites in a single layer inside the basket of an air fryer. Depending on the size, you may need to cook in batches.
  8. Air fry the bites: Cook at 400°F (205°C) for 7-9 minutes or until the bites are browned and crispy, shaking the basket halfway through to ensure even cooking.
