  • Author: Julian
  • Total Time: 45 minutes
  • Yield: 4 servings 1x

Description

Mississippi Mud Chicken is a comforting skillet dish featuring tender, seared chicken breasts cooked in a rich, savory sauce made with ranch dressing mix, brown gravy mix, cream of mushroom soup, and chicken broth. Topped with melted cheddar cheese and optional crispy bacon, this hearty meal is perfect served over rice, mashed potatoes, or with crusty bread to soak up the luscious sauce.

Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper, to taste

Sauce

  • 1 packet ranch dressing mix (about 1 ounce)
  • 1 packet brown gravy mix (about 1 ounce)
  • 1 cup chicken broth
  • 1 cup cream of mushroom soup (or cream of chicken soup)

Toppings

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled (optional)
  • 1/4 cup green onions, sliced (for garnish)

Instructions

  1. Prepare the Chicken: In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper. Add the chicken to the skillet and sear for about 5–7 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  2. Make the Sauce: In the same skillet, add the ranch dressing mix, brown gravy mix, chicken broth, and cream of mushroom soup. Stir well to combine and bring to a simmer.
  3. Cook the Chicken in the Sauce: Place the seared chicken breasts back into the skillet, spooning some of the sauce over the top. Cover the skillet and let it simmer for about 15–20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  4. Add Cheese and Bacon: In the last few minutes of cooking, sprinkle the shredded cheddar cheese and crumbled bacon (if using) over the chicken. Cover again until the cheese is melted.
  5. Serve: Serve the Mississippi Mud Chicken hot, garnished with sliced green onions. It pairs well with rice, mashed potatoes, or crusty bread to soak up the delicious sauce.

Notes

  • For a lighter option, substitute cream of mushroom soup with a low-fat or reduced sodium version.
  • Bacon is optional; you can omit it for a less rich dish or replace with vegetarian bacon bits.
  • Ensure the chicken reaches an internal temperature of 165°F (74°C) to guarantee it is fully cooked.
  • Serve with sides like steamed vegetables, rice, mashed potatoes, or crusty bread to complete the meal.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
