Instructions
- Prepare the Crust: Preheat oven to 325°F (160°C). Line a muffin tin with paper liners or silicone molds. In a medium bowl, combine graham cracker crumbs with melted butter and stir until fully coated. Press about a tablespoon of the mixture firmly into the bottom of each liner. Bake for 5 minutes to set the crust. Remove and let cool.
- Make the Cheesecake Filling: In a large bowl, beat softened cream cheese with sugar and vanilla extract until smooth. Add eggs one at a time, beating well after each to ensure a creamy, lump-free batter. Pour the mixture evenly over the cooled crusts, filling each liner about two-thirds full.
- Caramelize the Apples: While the cheesecake bakes, heat a saucepan over medium heat and combine diced apples, brown sugar, butter, and cinnamon. Stir occasionally and cook for 5-7 minutes until apples are tender and caramelized. Remove from heat and cool slightly.
- Add the Topping and Bake: Spoon caramelized apple mixture onto each cheesecake batter-filled liner. Drizzle caramel sauce over each bite for extra sweetness. Bake for 18-20 minutes or until centers are set. Remove from oven and cool to room temperature.
- Chill and Serve: Refrigerate the cheesecake bites for at least 2 hours to firm up. Before serving, add a dollop of whipped cream and extra caramel drizzle. Serve chilled or at room temperature as preferred.
