  • Author: Julian
  • Total Time: 40 minutes
  • Yield: 6 breakfast bowls 1x

Description

These Meal Prep Breakfast Bowls combine savory ground breakfast sausage, fluffy eggs blended with creamy cottage cheese, and crispy hash browns topped with your choice of feta or cheddar cheese. Perfectly baked in individual containers, they make for an easy, protein-packed breakfast you can enjoy throughout the week.

Ingredients

Scale

Protein and Dairy

  • 1 lb ground breakfast sausage
  • 8 eggs
  • 1 cup cottage cheese
  • 3 oz crumbled feta OR shredded cheddar cheese

Vegetables and Starches

  • 3 cups frozen shredded hash browns

Seasonings

  • 1 tsp salt
  • ¼ tsp black pepper

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease six oven-friendly small containers, such as small rectangular glass tupperware dishes, to prevent sticking.
  2. Cook Sausage: Brown and crumble the ground breakfast sausage in a skillet over medium heat on the stovetop. Once cooked through, drain and remove any excess oil from the pan to keep the dish from becoming greasy.
  3. Blend Egg Mixture: In a blender or mixing bowl, combine the eggs, cottage cheese, salt, and black pepper. Blend until smooth and well combined, creating a creamy egg base.
  4. Assemble Bowls: Evenly distribute the frozen shredded hash browns and the crumbled cooked sausage into the bottoms of the prepared containers. Pour the blended egg and cottage cheese mixture over the hash browns and sausage. Top each bowl with about ½ ounce of your chosen cheese, either crumbled feta or shredded cheddar.
  5. Bake: Bake the assembled bowls in the preheated oven at 350°F for 25 minutes or until the eggs are set and the cheese is melted and slightly golden.
  6. Cool and Store: Enjoy immediately or allow the bowls to cool completely before sealing with a lid. Store in the refrigerator for up to five days for convenient, grab-and-go breakfasts.
  7. Reheat: To serve, reheat the breakfast bowls in the oven at 275°F for 20 minutes or microwave on high for 2 minutes until warmed through.

Notes

  • Using frozen hash browns helps create a crispy bottom layer after baking.
  • Removing excess oil from the sausage ensures a less greasy meal prep bowl.
  • Choose your favorite cheese flavor—feta adds a tangy twist, while cheddar offers a classic melty topping.
  • These breakfast bowls can be customized with additional vegetables such as spinach or bell peppers if desired.
  • Make sure to cool completely before sealing containers to prevent condensation and sogginess during storage.
