Instructions
- Preheat Oven and Prepare Containers: Preheat your oven to 350°F (175°C) and grease six small oven-friendly containers, such as small rectangular glass tupperware, to prevent sticking.
- Brown the Sausage: On the stovetop, cook and crumble the ground breakfast sausage over medium heat until browned and fully cooked. Drain and remove any excess oil from the pan for a leaner result.
- Blend Egg Mixture: In a blender or with a whisk, combine the 8 eggs, 1 cup of cottage cheese, salt, and black pepper. Blend until smooth and creamy to ensure a fluffy texture.
- Assemble the Bowls: Place one cup of frozen shredded hash browns evenly at the bottom of each prepared container. Add the crumbled sausage evenly on top of the hash browns. Pour the blended egg and cottage cheese mixture over the sausage and hash browns. Finally, top each bowl with approximately ½ ounce of crumbled feta or shredded cheddar cheese.
- Bake: Bake the assembled breakfast bowls in the preheated oven at 350°F for 25 minutes, or until the eggs are set and the cheese is melted and slightly golden.
- Store and Reheat: Enjoy the bowls immediately or let them cool completely before sealing with lids. Store in the refrigerator for up to 5 days. Reheat in the oven at 275°F for 20 minutes or microwave each bowl for about 2 minutes until warmed through.
