Instructions

  1. Prepare Ingredients: Bring the cream cheese and butter (or coconut butter) to room temperature if they are not already soft to ensure easier blending.
  2. Blend Ingredients: Using a hand mixer or fork, blend the cream cheese, butter, powdered sugar, and lemon zest together until smooth. The hand mixer yields the smoothest texture but stirring by hand is acceptable.
  3. Firm Up Mixture: Spread the mixture into a container or freeze it for a few minutes until firm enough to scoop.
  4. Scoop and Shape: Use a mini cookie scoop to form balls onto a parchment-lined plate. Freeze until the truffles are firm.
  5. Optional Chocolate Coating: Melt white chocolate chips (with a drop of oil for smoother consistency if desired) and dip the truffles to coat. Alternatively, coconut butter can be used for dipping.
  6. Set and Store: Once the coating sets, cut truffles in half as shown in photos. Store leftovers refrigerated or frozen to maintain freshness.

Notes

  • If using coconut butter instead of cream cheese and butter, the flavor will be slightly different but still delicious.
  • Natural food coloring or a pinch of turmeric can be added for a vibrant yellow color but is optional.
  • The powdered sugar can be substituted with erythritol for a low-sugar version.
  • For easier coating, stirring a small amount of oil into melted white chocolate helps create a smoother sauce.
