  • Author: Julian
  • Total Time: 20 minutes
  • Yield: 12 servings 1x
  • Diet: Vegetarian

Description

These Lamington Bliss Balls are a delightful no-bake treat combining almond meal, protein powder, and fresh raspberries, coated in a smooth chocolate coconut ganache. Perfect as a healthy snack or dessert, they deliver a blend of nutty, fruity, and chocolaty flavors in bite-sized form, ready in just 20 minutes.

Ingredients

Scale

Dry Ingredients

  • 1 cup (150g) almond meal
  • 1/2 cup vanilla protein powder
  • 1/3 cup desiccated coconut
  • extra desiccated coconut, to roll

Wet Ingredients

  • 3 tablespoons (60g) honey or maple syrup
  • 1/4 cup (30g) dark chocolate chips
  • 1/4 cup coconut milk (from a carton)

Other

  • 12 fresh raspberries (can use frozen)
  • Vanilla extract (quantity not specified, estimated 1 teaspoon)

Instructions

  1. Combine dry ingredients: In a large bowl, mix together the almond meal, vanilla protein powder, and desiccated coconut until well combined.
  2. Add wet ingredients and form dough: Add vanilla extract, honey or maple syrup, and 1/3 cup cold water to the dry mixture. Stir until a dough-like consistency forms.
  3. Shape balls: Divide the dough evenly into 12 balls of similar size.
  4. Insert raspberries: Using your finger, create a hole in the center of each ball and press a whole raspberry inside. Reform the ball to cover the raspberry completely, then place them on a tray and freeze for 10-15 minutes to firm up.
  5. Melt chocolate ganache: While the balls are chilling, melt the dark chocolate chips in a microwave-safe bowl in 20-second increments, stirring after each increment until smooth. Slowly add the coconut milk and stir until the mixture is creamy and homogenous.
  6. Coat bliss balls: Dip each chilled ball into the chocolate ganache, then roll in extra desiccated coconut to coat. Place them on a plate or tray to set before serving.

Notes

  • For a vegan option, use maple syrup instead of honey and ensure the protein powder is plant-based.
  • You can substitute fresh raspberries with frozen raspberries if fresh aren’t available.
  • Adjust the amount of coconut milk in the ganache for desired thickness.
  • Store the bliss balls in the refrigerator or freezer for longer freshness.
