- 1/2 cup vanilla protein powder
- 1/3 cup desiccated coconut
- extra desiccated coconut, to roll
Wet Ingredients
- 3 tablespoons (60g) honey or maple syrup
- 1/4 cup (30g) dark chocolate chips
- 1/4 cup coconut milk (from a carton)
Other
- 12 fresh raspberries (can use frozen)
- Vanilla extract (quantity not specified, estimated 1 teaspoon)
Instructions
- Combine dry ingredients: In a large bowl, mix together the almond meal, vanilla protein powder, and desiccated coconut until well combined.
- Add wet ingredients and form dough: Add vanilla extract, honey or maple syrup, and 1/3 cup cold water to the dry mixture. Stir until a dough-like consistency forms.
- Shape balls: Divide the dough evenly into 12 balls of similar size.
- Insert raspberries: Using your finger, create a hole in the center of each ball and press a whole raspberry inside. Reform the ball to cover the raspberry completely, then place them on a tray and freeze for 10-15 minutes to firm up.
- Melt chocolate ganache: While the balls are chilling, melt the dark chocolate chips in a microwave-safe bowl in 20-second increments, stirring after each increment until smooth. Slowly add the coconut milk and stir until the mixture is creamy and homogenous.
- Coat bliss balls: Dip each chilled ball into the chocolate ganache, then roll in extra desiccated coconut to coat. Place them on a plate or tray to set before serving.
