Corn Casserole

  • ½ cup butter (melted)
  • 2 large eggs
  • 8.5 ounces Jiffy cornbread mix (1 box)
  • 15.25 ounces corn (rinsed, drained)
  • 14.75 ounces creamed corn (undrained)
  • 1 cup sour cream
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 cups cheddar cheese (divided)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F to ensure it’s ready for baking the casserole.
  2. Prepare Baking Dish: Grease a 9×9 or 9×13-inch baking dish thoroughly with nonstick spray to prevent the casserole from sticking during baking.
  3. Mix Ingredients: In a large bowl, combine the melted butter, eggs, Jiffy cornbread mix, rinsed and drained corn, undrained creamed corn, sour cream, salt, pepper, garlic powder, and onion powder. Mix until all ingredients are well incorporated, taking care not to overmix.
  4. Add Cheese: Stir in 1 cup of the cheddar cheese into the mixture, reserving the remaining 1 cup for topping.
  5. Fill Baking Dish: Pour the prepared mixture evenly into the greased baking dish and smooth the top with a spatula.
  6. Top with Cheese: Sprinkle the remaining 1 cup of cheddar cheese evenly over the top of the casserole.
  7. Cover and Bake: Cover the baking dish tightly with aluminum foil and bake in the preheated oven for 30 minutes to allow the casserole to set.
