  • 1 cup + 2 tablespoons old fashioned gluten-free rolled oats, separated

  • 1 large egg
  • 1/4 cup coconut oil, melted
  • 1/4 cup + 1 tablespoon honey, separated
  • 3/4 cup unsweetened almond milk

Instructions

  1. Preheat and Line: Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan and line it with parchment paper. Position the oven rack in the middle to ensure even baking.
  2. Whisk Dry Ingredients: In a large bowl, sift together the gluten-free flour, baking powder, and salt. Whisk them well to combine the dry ingredients uniformly.
  3. Mix Wet Ingredients and Oats: In a separate medium bowl, beat the egg, Greek yogurt, melted coconut oil, 1/4 cup honey, and 1 cup of the gluten-free rolled oats until well blended. Then stir in the almond milk until combined.
  4. Combine to Form Dough: Gradually add the wet mixture to the dry ingredients, stirring gently with a wooden spoon just until incorporated. Avoid over-mixing to keep the bread tender. The batter will be thick and moist, similar to a dense cake batter.
  5. Transfer to Pan and Top with Oats: Pour the batter into the prepared loaf pan and evenly sprinkle the remaining 2 tablespoons of oats over the top for a lovely crunchy texture.
  6. Bake Until Golden Brown: Bake on the center rack for approximately 30 to 45 minutes. The bread is ready when golden brown on top and a toothpick inserted in the center comes out clean.
