- 1/4 cup + 1 tablespoon honey, separated
- 3/4 cup unsweetened almond milk
Instructions
- Preheat and Line: Preheat your oven to 375°F (190°C). Grease a 9×5-inch loaf pan and line it with parchment paper. Position the oven rack in the middle to ensure even baking.
- Whisk Dry Ingredients: In a large bowl, sift together the gluten-free flour, baking powder, and salt. Whisk them well to combine the dry ingredients uniformly.
- Mix Wet Ingredients and Oats: In a separate medium bowl, beat the egg, Greek yogurt, melted coconut oil, 1/4 cup honey, and 1 cup of the gluten-free rolled oats until well blended. Then stir in the almond milk until combined.
- Combine to Form Dough: Gradually add the wet mixture to the dry ingredients, stirring gently with a wooden spoon just until incorporated. Avoid over-mixing to keep the bread tender. The batter will be thick and moist, similar to a dense cake batter.
- Transfer to Pan and Top with Oats: Pour the batter into the prepared loaf pan and evenly sprinkle the remaining 2 tablespoons of oats over the top for a lovely crunchy texture.
- Bake Until Golden Brown: Bake on the center rack for approximately 30 to 45 minutes. The bread is ready when golden brown on top and a toothpick inserted in the center comes out clean.
- Let Cool Completely Before Brushing with Honey: Remove the bread from the loaf pan and place it on a cooling rack. Let it cool fully before brushing the top with the remaining 1 tablespoon of honey. Slice and serve.
