Instructions

  1. Preheat Oven: Preheat the oven to 400°F and lightly spray a 9×13 baking dish with cooking spray to prepare it for the casserole.
  2. Sauté Onions and Brown Beef: Heat 1 teaspoon of avocado oil in a skillet over medium-high heat. Add the diced onions and sauté for 2 minutes until softened. Add the ground beef and cook, breaking it into small pieces, for 8-10 minutes until browned and cooked through.
  3. Transfer Meat Mixture: Drain any excess fat from the cooked onion and beef mixture if necessary, then transfer it into the prepared baking dish.
  4. Cook Mushrooms and Make Sauce: In the same skillet, add the remaining 2 teaspoons of avocado oil. Cook the diced mushrooms over medium heat for 2-4 minutes until soft. Sprinkle in the flour and stir to coat the mushrooms evenly. Gradually pour in the broth one cup at a time, stirring constantly to prevent lumps. Let the mixture simmer for 3-5 minutes until it thickens. Add salt, garlic powder, onion powder, and black pepper, and stir to combine.
  5. Combine Casserole Ingredients: Pour the mushroom sauce over the beef in the baking dish. Add the cooked lentils, frozen mixed vegetables, frozen cauliflower rice, and 1 cup of shredded cheddar cheese. Stir everything together well to distribute the ingredients evenly.
  6. Even Out the Mixture: Spread the combined mixture evenly across the base of the baking dish to ensure an even bake.
  7. Add Tater Tots and Cheese: Layer the frozen tater tots evenly on top of the casserole mixture, pressing down lightly to compact them. Sprinkle the remaining ½ cup shredded cheddar cheese over the tater tots.
  8. Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the casserole is bubbly and the tater tots turn golden brown and crispy on top.
