Instructions
- Prepare the Marinade: Set out a 1-2 cup measuring pitcher and add olive oil, balsamic vinegar, Dijon mustard, honey, dried thyme, garlic powder, salt, and black pepper. Whisk thoroughly until smooth. You can use it immediately or cover and refrigerate for later use.
- Prep the Vegetables: Trim and slice all vegetables into long strips. This shape helps prevent them from falling through the grill grates during cooking.
- Marinate the Vegetables: Place the sliced vegetables on a large rimmed baking sheet. Pour the prepared marinade over them and gently toss to ensure all pieces are well coated. Allow them to marinate for at least 30 minutes, or longer if desired for more flavor.
