Using a pre-made crust for convenience, this pizza offers a perfect balance of creamy, tangy, and savory flavors, making it a wholesome and satisfying meal that’s easy to prepare.

Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Vegetables and Aromatics

  • 1 cup fresh spinach, chopped
  • 1 medium head of garlic

Oils and Seasonings

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper to taste

Cheeses

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Garnish

  • Fresh basil leaves for garnish

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head to expose the cloves, drizzle with 1 tablespoon olive oil, wrap tightly in aluminum foil, and roast for 30-35 minutes until the garlic is soft and caramelized. Let cool slightly, then squeeze the roasted cloves out into a bowl.
  2. Prepare the Spinach: Heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste, then remove from heat and set aside.
  3. Make the Garlic-Ricotta Mixture: Mash the roasted garlic cloves in the bowl until smooth. Add ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix thoroughly until well combined and creamy.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pre-made pizza crust, leaving a small crust border. Evenly distribute the sautéed spinach on top, then sprinkle the remaining mozzarella and crumbled feta cheese. If desired, sprinkle crushed red pepper flakes for added heat.
  5. Bake the Pizza: Place the assembled pizza into the preheated oven at 475°F (245°C) and bake for 15-20 minutes, or until the crust is golden brown and the cheeses are bubbly and slightly browned.
  6. Finishing Touches: Remove the pizza from the oven and let it cool for 2-3 minutes to allow the cheese to set. Garnish with fresh basil leaves before slicing and serving.

Notes

  • Pre-made pizza crust is used for convenience but homemade dough can be substituted for a more personalized texture.
  • Roasted garlic can be prepared ahead and stored in the refrigerator for up to a week.
  • Ensure spinach is well-drained to avoid soggy crust.
  • Adjust crushed red pepper flakes to control the heat level.
  • For variations, substitute ricotta with mascarpone or goat cheese, and add proteins like grilled chicken or shrimp as desired.
  • Using a pizza stone preheated for 30 minutes helps achieve a crispier crust.
