Ingredients
Scale
Peppers
- 4 large roasted red peppers (preserved in brine, drained)
Feta Cheese Mixture
- 200 grams (7 oz) feta cheese
- 2 tablespoons olive oil (+ extra for drizzling)
- 1 teaspoon dried oregano (+ extra for drizzling)
- 1 large garlic clove, minced
- Freshly ground black pepper, to taste
Toppings
- 1/2 small onion, sliced very thinly
- Optional: hot red pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven. Set your oven to 200°C (392°F) to ensure it reaches the right temperature by the time you finish prepping the peppers.
- Drain the Peppers. Remove the roasted red peppers from their jar and thoroughly drain to avoid excess moisture during baking.
- Prepare the Feta Mixture. In a small bowl, crumble the feta cheese with a fork until soft and mushy, allowing for easy stuffing. Add olive oil, dried oregano, freshly ground black pepper, and minced garlic to the bowl, then mix everything thoroughly to combine flavors evenly.
- Stuff the Peppers. Fill each roasted pepper gently with the feta mixture, ensuring they are evenly packed but not overfilled to avoid spilling during baking.
- Arrange and Top. Place the stuffed peppers in a small pan or baking dish. Evenly distribute the thinly sliced onion over the stuffed peppers. Drizzle extra olive oil and sprinkle additional dried oregano and freshly ground pepper on top for enhanced flavor.
- Bake to Perfection. Place the baking dish in the preheated oven and bake for about 15 minutes, allowing the cheese to warm up nicely and the flavors to meld together.
- Serve Warm. Remove from oven and garnish with chopped fresh parsley. Optionally, add some hot red pepper to spice up the dish before serving. Enjoy this as a flavorful appetizer or light meal.
Notes
- Roasted red peppers preserved in brine add a nice tanginess; if unavailable, you can roast fresh peppers yourself before starting.
- Adjust the quantity of garlic and oregano according to your preference for more or less pungency.
- For a spicier version, finely chop some hot red pepper and mix it into the feta stuffing or sprinkle on top before baking.
- Serve warm for best taste; leftovers can be refrigerated and briefly reheated before serving.
- Pair this dish with crusty bread or a fresh green salad to complete your Mediterranean meal.
