Description

A quick and flavorful Garlic Sesame Soba Noodles recipe combining tender soba noodles with a savory garlic and sesame sauce, enhanced with soy sauce, rice vinegar, and a touch of honey for sweetness. This easy-to-make dish can be customized with fresh vegetables and makes a perfect light meal or side dish.

Ingredients

Scale

Soba Noodles

  • 8 ounces soba noodles

Sauce

  • 3 tablespoons sesame oil
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey (or maple syrup for a vegan option)
  • 1 teaspoon chili paste (optional, for heat)

Garnish and Extras

  • 1/4 cup sesame seeds, toasted
  • 2 green onions, sliced
  • Fresh vegetables such as bell peppers, carrots, or snap peas (optional)

Instructions

  1. Cook the Soba Noodles: Bring a large pot of salted water to a boil. Add the soba noodles and cook according to package instructions, usually about 4-6 minutes, until tender but still slightly firm. Drain the noodles and rinse with cold water to stop the cooking process. Set the noodles aside.
  2. Prepare the Sauce: Heat sesame oil in a large skillet or wok over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant but not browned. Stir in soy sauce, rice vinegar, honey (or maple syrup), and chili paste if using. Cook the sauce mixture for another 1-2 minutes to meld the flavors.
  3. Combine Noodles and Sauce: Add the cooked soba noodles to the skillet with the sauce. Toss the noodles to evenly coat them with the garlic sesame sauce. If using fresh vegetables, add them now and toss everything together for an additional 1-2 minutes until the vegetables are heated through but still crisp.
  4. Serve: Remove the skillet from heat. Sprinkle the toasted sesame seeds and sliced green onions over the noodles. Serve the Garlic Sesame Soba Noodles warm and enjoy.

Notes

  • Toast the sesame seeds in a dry pan over medium heat, stirring frequently until golden and fragrant.
  • For a vegan version, substitute honey with maple syrup and ensure the soy sauce used is vegan-friendly.
  • Adjust chili paste quantity to control the level of heat according to your preference.
  • Add fresh vegetables like bell peppers, carrots, or snap peas for extra color, flavor, and nutrition.
  • Rinsing the noodles under cold water is key to prevent them from overcooking and becoming mushy.
