For the Pangrattato

  • 1/2 cup breadcrumbs (preferably homemade or panko)

Instructions

  1. Cook the pasta: Bring a large pot of salted water to a boil and cook your pasta according to package instructions. Before draining, reserve 1/2 cup of the pasta water for the sauce.
  2. Make the pangrattato: In a small skillet, heat the olive oil over medium heat. Add the breadcrumbs, garlic, and a pinch of salt. Toast for 3–5 minutes, stirring constantly, until the breadcrumbs are golden and crisp. Transfer to a bowl and set aside.
  3. Prepare the garlic butter sauce: In a large skillet or saucepan, melt the butter over medium-low heat. Add the minced garlic and sauté for 1–2 minutes until fragrant, being careful not to brown it. Stir in the red chili flakes if using.
  4. Combine pasta and sauce: Add the cooked pasta to the skillet along with the reserved pasta water. Toss to coat the pasta evenly with the buttery sauce. Remove from heat and stir in the grated cheese until it melts and creates a creamy coating.
  5. Plate and garnish: Divide the pasta into bowls. Top with the crispy pangrattato, additional grated cheese, and sprinkle with fresh parsley.
