  • Author: Julian
  • Total Time: 29 minutes
  • Yield: 12 servings 1x

Description

These Fudgy Chewy Browkies combine the rich, dense texture of brownies with the chewy, chunk-filled delight of cookies. Baked to perfection with melted dark chocolate, butter, and chocolate chips, this treat offers a luscious, soft center and a slightly crisp edge, making it an irresistible dessert or snack for chocolate lovers.

Ingredients

Scale

Dry Ingredients

  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 85 g dark or milk chocolate chips

Wet Ingredients

  • 225 g dark chocolate (chopped)
  • 56 g butter (salted or unsalted)
  • 2 eggs (room temperature)
  • 1 teaspoon vanilla extract

Sugars

  • 100 g caster or granulated sugar
  • 90 g Demerara or raw sugar

Instructions

  1. Preheat Oven: Set your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Prepare a baking tray by lining it with parchment paper to prevent sticking.
  2. Melt Chocolate and Butter: In a heatproof bowl placed over simmering water, melt the chopped dark chocolate and butter together, stirring consistently until smooth. Then, mix in the vanilla extract to infuse flavor.
  3. Whisk Eggs and Sugars: In a separate bowl, whisk the caster sugar, Demerara sugar, and eggs thoroughly until the mixture turns light and fluffy, contributing to the browkies’ texture.
  4. Combine Dry Ingredients: Sift together the plain flour, cocoa powder, baking powder, and salt to ensure no lumps and an even distribution of leavening agents. Fold the chocolate chips into this dry mix.
  5. Mix Wet and Dry Mixtures: Gently combine the melted chocolate and butter mixture with the egg and sugar mixture. Then carefully fold in the sifted dry ingredients, mixing until just combined to avoid overworking the batter.
  6. Scoop and Bake: Drop tablespoons of batter evenly spaced onto the parchment-lined tray. Bake for 12-14 minutes until the browkies are set on the outside but remain soft and fudgy in the center.
  7. Cool: Allow the browkies to cool on the baking tray for about 10 minutes to firm up before transferring them to a cooling rack to cool completely.

Notes

  • Use room temperature eggs to help with better mixing and texture.
  • The browkies are best enjoyed slightly warm to experience their fudgy gooey center.
  • Ensure not to overbake to maintain the chewy texture.
  • You can substitute dark chocolate chips with milk or white chocolate chips based on preference.
  • Store in an airtight container at room temperature for up to 3 days.
