- Roll and cut puris: After resting, roll the dough out on a lightly floured surface to about ¼-inch thickness. Using a cutter or a round object, cut evenly sized puris to ensure they cook uniformly.
- Heat the oil: In a deep frying pan, pour enough vegetable oil to submerge the puris completely. Heat the oil to 350°F (175°C) for optimal frying temperature ensuring crisp golden puris.
- Fry the puris: Gently lower the puris into the hot oil and fry them for 2-3 minutes on each side until they turn golden brown and flaky. Remove and drain excess oil on paper towels.
- Prepare the syrup: In a saucepan, combine water and sugar and bring to a gentle boil. Simmer for 5-7 minutes until the syrup thickens slightly, then add ground cardamom and rose essence to infuse aromatic flavor.
