  • 0.54 cups full-fat coconut milk (or evaporated milk, heavy cream, or evaporated coconut milk as substitute)

Instructions

  1. Prepare the Mango Puree: Peel, pit, and slice the fully ripened mangoes into small pieces. Transfer these to a blender or food processor and blend for at least one minute until the puree is very smooth to break up mango fibers. For an extra smooth pudding, strain the puree through a fine sieve.
  2. Bloom the Gelatin: In a large bowl, combine the cold water and gelatin powder. Mix gently for 30 to 45 seconds to allow the gelatin to thicken. It may become gel-like with a slight smell, which will disappear later.
  3. Combine Ingredients: Add the white granulated sugar, coconut milk, and mango puree to the gelatin mixture. Stir thoroughly until the mixture is smooth and uniformly combined.
  4. Heat the Mixture: Pour the combined mixture into a small pot and place over medium-low heat. Whisk continuously for about 3 to 4 minutes until the gelatin fully melts and dissolves, resulting in a creamy, smooth texture. Avoid boiling or letting the mixture simmer or bubble.
  5. Set the Pudding: Pour the warm mixture into four greased serving bowls or silicone molds. Remove any air bubbles on the surface by gently poking and smooth with a spatula if needed. Optionally, cover with plastic wrap.
  6. Chill: Refrigerate the bowls for at least 6 hours or overnight until the pudding is fully set. Serve chilled with a drizzle of evaporated milk or coconut milk for a dairy-free option.
