Instructions
- Crush the Cookies: In a food processor, crush all but a few of the iced circus animal cookies until they form fine crumbs. Set aside about 3 whole cookies for garnishing later.
- Mix with Cream Cheese: Add the cream cheese to the cookie crumbs and mix until fully combined and a soft, sticky dough forms.
- Form Truffle Balls: Using a one-tablespoon cookie scoop, form the dough into balls or truffles. Place them on a baking sheet lined with parchment paper for easy handling.
- Chill the Truffles: Place the tray with truffles in the refrigerator for at least 30 minutes to firm up.
- Melt White Chocolate: While the truffles chill, melt 16 ounces of the white chocolate almond bark using a melting pot or microwave in 30-second intervals until smooth. Keep the truffles refrigerated until ready to dip.
- Dip the Truffles: Dip each chilled truffle into the melted white chocolate to fully coat, then return them to the parchment paper to allow the coating to harden.
- Prepare Pink Drizzle: Melt the remaining 2 ounces of almond bark and add 6-8 drops of pink food coloring. Mix until the color is evenly distributed.
- Decorate: Drizzle the pink colored chocolate over the white-coated truffles and top with crushed circus animal cookie crumbs for garnish.
