  • 1/2 cup Kalamata olives, pitted and sliced

Instructions

  1. Preheat the oven and prepare the baking dish: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or a similar casserole dish to prevent sticking.
  2. Layer the rice: Add the uncooked white rice to the baking dish and spread it evenly across the bottom to form a uniform base layer.
  3. Add chicken broth: Pour the 2 cups of chicken broth over the rice, making sure the rice is completely submerged to ensure even cooking.
  4. Distribute cooked chicken: Evenly spread the shredded or diced cooked chicken over the rice and broth layer.
  5. Add fresh vegetables: Scatter the diced cucumber, finely chopped red onion, halved grape tomatoes, and sliced Kalamata olives evenly over the chicken layer.
  6. Prepare tzatziki sauce mixture: In a medium bowl, combine the Greek-style tzatziki sauce with garlic powder, dried oregano, salt, and pepper; mix well to blend all the flavors.
  7. Spread the sauce: Evenly spread the seasoned tzatziki sauce mixture over the chicken and vegetable layers, ensuring they are completely covered.
  8. Add feta cheese: Sprinkle the crumbled feta cheese evenly across the top of the casserole to add a tangy and creamy finishing touch.
