  • 12 large eggs
  • 1 cup milk

  • ½ teaspoon black pepper

  • 2 pounds hash brown potatoes
  • 1 pound bulk breakfast sausage, cooked
  • ½ cup onions, diced
  • ½ cup red and green bell peppers, diced

Cheese

  • 1 ½ cups cheddar cheese, shredded from a block
  • 1 ½ cups pepper jack cheese, shredded from a block

Instructions

  1. Prepare Crockpot: Spray the inside of the crockpot with non-stick cooking spray to prevent sticking and make cleanup easier. Set aside.
  2. Mix Cheeses: Combine the shredded cheddar and pepper jack cheeses in a bowl and set aside for layering later.
  3. Combine Sausage and Vegetables: Mix the cooked breakfast sausage with diced onions and bell peppers in a separate bowl and set aside.
  4. Beat Eggs: In a large bowl, beat the eggs until well blended and smooth.
  5. Add Milk and Seasonings: Whisk in the milk, kosher salt (or table salt), and black pepper into the beaten eggs. Set this egg mixture aside.
  6. First Layer – Potatoes: Place one-third of the hash brown potatoes evenly in the bottom of the crockpot to form the first layer.
  7. Second Layer – Sausage Mixture: Sprinkle one-third of the sausage, onion, and bell pepper mixture evenly over the potatoes.
  8. Third Layer – Cheese: Top the sausage mixture with about 1 cup of the shredded cheese blend.
  9. Repeat Layers: Repeat the layering two more times—potatoes, sausage mixture, and cheese—creating a total of three layers.
  10. Final Cheese Layer: End with the remaining cheese mixture spread evenly on top.
  11. Add Egg Mixture: Pour the prepared egg mixture evenly over all the layers, letting it seep through the layers.
  12. Cook: Cover and cook the casserole on low in the crockpot for 8 hours until the eggs are set and the casserole is cooked through.
