- 6oz / 170g long pasta (linguine recommended)
- 1oz / 30g finely grated Parmesan cheese (Parmigiano Reggiano)
Instructions
- Sauté Garlic: In a large saucepan, heat 1 tablespoon of olive oil over low heat. Add the diced garlic and sauté gently until it turns lightly golden, releasing its fragrant aroma.
- Cook Mushrooms: Add the sliced mushrooms and the remaining tablespoon of olive oil to the pan. Increase heat to medium and cook, stirring frequently, until the mushrooms are nicely browned. Season with a small pinch of salt and black pepper once the mushrooms have browned to enhance their flavor.
- Boil Pasta: While the mushrooms cook, bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions, but boil for about 2 minutes less than the total time to keep the pasta al dente. Remember to reserve some pasta cooking water before draining.
- Prepare Miso Sauce: In a small bowl, whisk the miso paste together with a ladle of the reserved hot pasta water until smooth and free of clumps. This helps to create a creamy consistency for the sauce.
- Combine and Finish: Drain the pasta once al dente and immediately add it to the pan with the sautéed mushrooms. Stir in the grated Parmesan cheese and the prepared miso sauce. Toss continuously for a couple of minutes, allowing the cheese to melt and the sauce to coat the pasta evenly. Add more reserved pasta water as needed to achieve a luscious, creamy texture.
