Ingredients
Scale
Cheese Mixture
- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
Vegetables & Beans
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup corn (canned or frozen, thawed)
- 1/2 cup diced tomatoes (fresh or drained canned)
- 1/4 cup red onion, finely chopped
- 1/4 cup jalapeños, diced (fresh or pickled)
- 1 tablespoon lime juice
- 1/2 cup chopped fresh cilantro (for garnish)
Seasonings & Coating
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- Salt and pepper, to taste
- 1/2 cup crushed tortilla chips (for coating)
Instructions
- Prepare Cheese Base: In a large mixing bowl, combine softened cream cheese and shredded cheddar cheese. Mix thoroughly until the mixture becomes smooth and creamy, creating a soft base for the cheese log.
- Add Vegetables and Seasonings: Stir in the black beans, corn, diced tomatoes, red onion, jalapeños, lime juice, garlic powder, cumin, salt, and pepper. Mix everything evenly to distribute all flavors and textures uniformly throughout the cheese mixture.
- Shape and Chill: Transfer the mixture onto a large piece of plastic wrap and shape it carefully into a log form. Wrap the cheese log tightly in the plastic wrap to hold its shape, then refrigerate it for at least 2 hours or until it becomes firm and easy to handle.
- Coat the Cheese Log: Once chilled and firm, unwrap the cheese log. Roll it evenly in the crushed tortilla chips until fully coated, ensuring the chips stick to the creamy surface for added crunch and flavor.
- Garnish and Serve: Place the coated cheese log on a serving platter. Garnish generously with the chopped fresh cilantro. Serve alongside additional tortilla chips or fresh vegetable sticks as a perfect party appetizer.
Notes
- Drain beans and tomatoes thoroughly to avoid excess moisture that can make the log too soft.
- Use pickled jalapeños with seeds removed for a milder heat, or fresh jalapeños with seeds for more spice.
- For extra spiciness, include some jalapeño seeds or add a pinch of cayenne pepper.
- Coat the cheese log in crushed tortilla chips just before serving to maintain its crunchiness.
- This cheese log can be made up to 24 hours in advance; keep refrigerated and apply the coating right before serving.
