Ingredients
Scale
Banana Bread Batter
- 3 ripe bananas, mashed
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup granulated sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
Cinnamon Crumb Topping
- 1/2 cup brown sugar
- 1/2 cup all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat and prepare: Preheat your oven to 350°F (175°C) and grease a 9×5 inch loaf pan thoroughly to prevent sticking.
- Mash bananas: In a mixing bowl, use a fork to mash the ripe bananas until smooth, ensuring maximum sweetness and moisture.
- Mix wet ingredients: Stir the melted butter into the mashed bananas, then add granulated sugar, beaten egg, and vanilla extract, mixing until combined.
- Combine dry ingredients: In a separate bowl, sift together the baking soda, salt, and flour. Gradually add the dry mix to the wet ingredients, stirring gently until just combined with some lumps remaining to avoid a dense loaf.
- Prepare crumb topping: Mix brown sugar, flour, and ground cinnamon in a small bowl. Cut in the cold cubed butter with a pastry cutter or your fingers until the mixture forms coarse crumbs.
- Assemble and bake: Pour the batter into your prepared loaf pan, spreading evenly. Sprinkle the crumb topping evenly over the batter. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool and serve: Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
- Use very ripe bananas with brown spots for the best sweetness and moisture.
- Do not overmix the batter to keep the bread light and fluffy.
- Let the bread cool slightly before removing from the pan to prevent breaking.
- Add 1/2 cup chopped nuts or chocolate chips to the batter for extra flavor.
- Store leftovers in an airtight container at room temperature for up to 4 days or freeze for up to 3 months.
- Frozen bananas can be used after thawing and draining excess liquid.
- Experiment by adding oats, chopped nuts, or cocoa powder to the crumb topping for variety.
