- Prepare the Yogurt Mixture: In a large bowl, combine the chopped strawberries, plain Greek yogurt, honey, and vanilla extract. Mix thoroughly until all ingredients are well incorporated.
- Form the Clusters: Using a spoon, scoop about 2 tablespoons of the yogurt mixture and place dollops onto a baking sheet lined with parchment paper or a large plate. Shape them into clusters. You should be able to form about 10 clusters.
- Freeze the Clusters: Place the baking sheet with the formed yogurt clusters in the freezer. Allow them to freeze completely and become solid, which usually takes about 1 to 2 hours.
- Melt the Chocolate: In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave in 15 to 30-second intervals, stirring well in between each session, until the chocolate is fully melted and smooth.
- Dip the Frozen Clusters: Remove the yogurt clusters from the freezer. Using a spoon, carefully dip each frozen cluster into the melted chocolate, making sure each cluster is thoroughly coated. Place the chocolate-coated clusters back on the parchment-lined baking sheet. Optionally, sprinkle some sea salt atop each cluster to enhance flavor.
- Refrigerate to Set: Return the coated clusters to the freezer for a few minutes to allow the chocolate to harden and the yogurt to solidify a bit more. Once set, enjoy these delicious frozen clusters as a refreshing and healthy snack.
