  • 2 Tsp Tomato Paste
  • 1/3 Tsp Salt
  • 1/3 Tsp Black Pepper

  • 1 Tbsp Pasta Water (reserved) or Vegetable Broth/Chicken Broth
  • Heavy Cream (quantity approx. 100 ml or 1/3 cup)
  • Parmesan Cheese (quantity approx. 30 g or 1/4 cup grated)

Instructions

  1. Cook Spaghetti Al Dente: Fill a large pot with water and bring it to a boil. Add 1 teaspoon of oil and a pinch of salt to the boiling water. Toss in 150g of spaghetti and cook for approximately 8 minutes until al dente.
  2. Drain and Rinse Pasta: Drain the spaghetti while reserving ½ cup of the pasta water. Lightly rinse the pasta under warm water, then set aside.
  3. Prepare the Sauce Base: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 teaspoon of minced garlic and 1 chopped medium onion, sautéing until the onion becomes translucent and fragrant.
  4. Add Vegetables and Seasoning: Incorporate 1 medium chopped bell pepper (green and yellow), 2 teaspoons of tomato paste, 1 tablespoon of Cajun seasoning, salt, and black pepper. Stir well to combine all ingredients.
  5. Deglaze the Skillet: Pour in the reserved pasta water or your choice of vegetable or chicken broth to lift the flavors from the bottom of the skillet. Stir well.
