- 1 Tbsp Cajun Seasoning
- 1 Tsp Garlic (minced)
- 1 Medium Onion (chopped)
- 1 Medium Bell Pepper (green & yellow, chopped)
- 2 Tsp Tomato Paste
- 1/3 Tsp Salt
- 1/3 Tsp Black Pepper
Liquids & Finishers
- 1 Tbsp Pasta Water (reserved) or Vegetable Broth/Chicken Broth
- Heavy Cream (quantity approx. 100 ml or 1/3 cup)
- Parmesan Cheese (quantity approx. 30 g or 1/4 cup grated)
Instructions
- Cook Spaghetti Al Dente: Fill a large pot with water and bring it to a boil. Add 1 teaspoon of oil and a pinch of salt to the boiling water. Toss in 150g of spaghetti and cook for approximately 8 minutes until al dente.
- Drain and Rinse Pasta: Drain the spaghetti while reserving ½ cup of the pasta water. Lightly rinse the pasta under warm water, then set aside.
- Prepare the Sauce Base: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add 1 teaspoon of minced garlic and 1 chopped medium onion, sautéing until the onion becomes translucent and fragrant.
- Add Vegetables and Seasoning: Incorporate 1 medium chopped bell pepper (green and yellow), 2 teaspoons of tomato paste, 1 tablespoon of Cajun seasoning, salt, and black pepper. Stir well to combine all ingredients.
- Deglaze the Skillet: Pour in the reserved pasta water or your choice of vegetable or chicken broth to lift the flavors from the bottom of the skillet. Stir well.
- Add Cream and Thicken Sauce: Reduce heat to low, then gently stir in heavy cream to prevent curdling. Allow the sauce to simmer gently until it thickens to a smooth, creamy consistency.
- Combine Pasta and Sauce: Add the cooked spaghetti back into the skillet. Gently toss the pasta in the sauce to ensure every strand is well-coated with the creamy Cajun mixture.
- Add Parmesan Cheese: Sprinkle grated parmesan cheese over the pasta and stir it through until melted and fully incorporated, enriching the flavors.
- Serve: Plate the creamy Cajun spaghetti, optionally topping with extra parmesan cheese. Serve hot and enjoy this flavorful Louisiana-style dish.
Notes
- Use fresh garlic and quality Cajun seasoning to maximize flavor.
- Reserved pasta water is important to help create a cohesive sauce and adjust thickness.
- Heavy cream is key for the creamy texture; do not skip or substitute with low-fat options to maintain richness.
- For vegetarian variation, use vegetable broth instead of chicken broth.
- Adjust Cajun seasoning according to your spice tolerance.
- Serve immediately for best texture and flavor.
