Description

These Banana Bread Donuts offer a moist, naturally sweet twist on classic banana bread in a fun, bite-sized donut shape. Made with ripe bananas, pure maple syrup, and a simple blend of flour and baking powder, they’re a quick and easy breakfast or snack option baked to perfection in just 8 minutes.

Ingredients

Scale

Wet Ingredients

  • 2/3 cup mashed banana
  • 3 tbsp pure maple syrup (or honey)
  • 2 tbsp oil (or water)
  • 1/2 tsp pure vanilla extract (optional)

Dry Ingredients

  • 1 cup flour (white, spelt, oat, or gluten-free all-purpose flour)
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Prepare the Wet Ingredients: In a large bowl, whisk together the mashed bananas, pure maple syrup or honey, oil or water, and vanilla extract until well combined and smooth.
  2. Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a donut pan or mini muffin tin lightly to prevent sticking.
  3. Combine Dry Ingredients: In a separate bowl, stir together the flour, baking powder, and salt to ensure they are evenly mixed.
  4. Make the Donut Batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is just combined. Be careful not to overmix to keep the donuts tender.
  5. Fill the Pan: Spoon or pipe the batter evenly into the greased donut pan or mini muffin tin, smoothing the tops with a spatula.
  6. Bake the Donuts: Place the pan in the preheated oven and bake for approximately 8 minutes, or until the donuts rise and a toothpick inserted into the center comes out mostly clean.
  7. Cool and Serve: Remove the donuts from the oven and allow them to cool in the pan for a few minutes before carefully popping them out. Let cool completely on a wire rack. Optionally, glaze or frost as desired.

Notes

  • This recipe works with white, spelt, oat, or Bob’s gluten-free all-purpose flour. Almond or whole wheat flours have not been tested.
  • For a healthier option, use water instead of oil.
  • Try adding cinnamon or nutmeg to the dry ingredients for extra flavor.
  • Donuts are best enjoyed fresh but can be stored in an airtight container for up to 2 days.
  • Optional icings and a cinnamon cream cheese frosting recipe are available for topping.
