- 2/3 cup mashed banana
- 3 tbsp pure maple syrup (or honey)
- 2 tbsp oil (or water)
- 1/2 tsp pure vanilla extract (optional)

- 1 cup flour (white, spelt, oat, or gluten-free all-purpose flour)
- 1 tsp baking powder
- 1/4 tsp salt
Instructions
- Prepare the Wet Ingredients: In a large bowl, whisk together the mashed bananas, pure maple syrup or honey, oil or water, and vanilla extract until well combined and smooth.
- Preheat and Prepare the Pan: Preheat your oven to 350°F (175°C). Grease a donut pan or mini muffin tin lightly to prevent sticking.
- Combine Dry Ingredients: In a separate bowl, stir together the flour, baking powder, and salt to ensure they are evenly mixed.
- Make the Donut Batter: Gradually add the dry ingredients to the wet ingredients, stirring gently until the batter is just combined. Be careful not to overmix to keep the donuts tender.
- Fill the Pan: Spoon or pipe the batter evenly into the greased donut pan or mini muffin tin, smoothing the tops with a spatula.
- Bake the Donuts: Place the pan in the preheated oven and bake for approximately 8 minutes, or until the donuts rise and a toothpick inserted into the center comes out mostly clean.
- Cool and Serve: Remove the donuts from the oven and allow them to cool in the pan for a few minutes before carefully popping them out. Let cool completely on a wire rack. Optionally, glaze or frost as desired.

- This recipe works with white, spelt, oat, or Bob’s gluten-free all-purpose flour. Almond or whole wheat flours have not been tested.
- For a healthier option, use water instead of oil.
