Donut Batter

  • 1/4 cup vegetable oil
  • 2 eggs
  • 3/4 cup sugar
  • 3/4 cup pumpkin puree

  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour

Cinnamon Sugar Coating

  • 3 tablespoons sugar
  • 2 teaspoons ground cinnamon

Instructions

  1. Preheat the oven and prepare pan: Preheat your oven to 350°F (175°C). Lightly spray a donut pan with nonstick cooking spray to prevent sticking.
  2. Mix wet and dry ingredients: In a large bowl, whisk together the vegetable oil, eggs, sugar, pumpkin puree, pumpkin pie spice, salt, baking powder, and vanilla extract until well combined. Stir in the flour gradually, mixing until the batter is smooth and homogeneous.
  3. Fill the donut pan: Spoon the batter into the prepared donut pan, filling each cavity about three-quarters full to allow room for rising during baking.
  4. Bake the donuts: Place the pan in the preheated oven and bake for 15 to 17 minutes, or until a toothpick inserted into the center of a donut comes out clean.
  5. Cool the donuts: Remove the donuts from the oven and let them cool in the pan for about 5 minutes. Then carefully remove the donuts from the pan and transfer to a wire rack to cool further.
  6. Prepare the cinnamon sugar coating: In a large plastic bag, combine 3 tablespoons of sugar with 2 teaspoons of ground cinnamon. One at a time, place each donut into the bag and gently shake to coat evenly with the cinnamon sugar mixture.
