Caramel Sauce

  • 1/2 cup coconut cream

Apple Filling

  • 3 cups Granny Smith apple, chopped
  • 1/2 cup water
  • 2 tbsp coconut sugar, divided
  • 1/2 tsp cinnamon
  • Juice of half a lemon
  • 1/2 tsp arrowroot starch

Roll Ups

  • 1 tbsp ghee, melted (substitute coconut oil for AIP)
  • 2 tsp coconut sugar
  • 6 grain-free tortillas (Siete Almond Flour tortillas or homemade cassava tortillas for AIP)
  • 1/4 tsp cinnamon

Instructions

  1. Make the caramel sauce: Combine coconut cream, 1/4 cup coconut sugar, and sea salt in a saucepan over medium heat. Stir to mix and bring to a low boil. Reduce to a simmer and cook for about 10 minutes, stirring often until the caramel thickens and turns a golden brown. Set aside and reheat if needed before serving.
  2. Prepare the apple filling: In a saucepan, combine the chopped apples, water, lemon juice, 2 tablespoons coconut sugar, and 1/2 teaspoon cinnamon. Cook over medium heat, stirring frequently, for 6-8 minutes until the apples soften.
  3. Thicken the filling: Mix the arrowroot starch with a small amount of water until smooth. Pour this slurry into the apple mixture, stir well, and then turn off the heat. This step helps the filling set and reduces excess liquid. Set aside to cool slightly.
  4. Prepare the ghee mixture: In a small bowl, combine the melted ghee with 2 teaspoons coconut sugar and mix well. Set this aside for brushing onto the tortillas.
  5. Assemble the roll ups: Warm the grain-free tortillas for about 10 seconds to make them pliable. Spoon about two large spoonfuls of the apple filling onto each tortilla and roll tightly. Place each roll-up seam-side down onto a parchment-lined baking sheet.
  6. Brush and bake: Lightly brush all sides of each roll-up with the ghee and coconut sugar mixture. Bake in a preheated 350°F oven for 15-18 minutes until the tortillas are crisp and golden. Sprinkle with 1/4 teaspoon cinnamon while still warm.
  7. Serve: Drizzle the baked roll ups with the prepared caramel sauce and serve extra caramel on the side for dipping.
